We currently do not log data on upgrades, we should append data to a file named like ipaserver-upgrade.log which mirrors install/uninstall log files.
Just to clarify, we do log the ipa-ldap-updater data. We just don't log the stdtout/stderr of commands executed by rpm nor do we have specific logging in ipa-upgradeconfig.
